Protein Baked Crumpets
Serves 2
364 Calories per serving

In the run up to pancake day, I thought I'd share an alternative breakfast idea that's quick and easy, and better yet only 364 calories! (Okay that's ignoring the half jar of Nutella but YOLO).
To make this delicious one tin bake, you will need:
INGREDIENTS
5 Crumpets
150ml Soy Milk or alternative
1 Medium Egg
1 Scoop Protein Powder - I used MyProtein Salted Caramel
OPTIONAL TOPPINGS
Nutella
Fruit - I used Strawberries
Chocolate - I used a Kinder Bar

METHOD
Line or prepare your tin - I used a loaf size one to fit the crumpets in a line
Pre-heat your oven to 180C
Add your crumpets to the tin
In a jug, combine the milk, egg and protein powder
Pour over the top of the crumpets and leave to soak for 10 mins
After 10 mins pop in the middle of the oven and bake for 25-30 mins
Take out and top with your chosen goodies
Eat straight out of the tin or serve up and be sophisticated
